A coffee cake to fall in love with!
If you love coffee and cake, this creation is hard to resist. It is really easy to prepare and is perfect for any coffee party.
Ingredients
2 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
A pinch of salt
1 cup strong coffee, cooled
1/2 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
For the streusel
1/2 cup brown sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
2 tablespoons cold butter, diced
Preparation
Preheat the oven: Preheat your oven to 180 degrees Celsius and grease a baking tin of your choice well.
Mix the flour and dry ingredients: Mix the flour, sugar, baking powder, ground cinnamon and a pinch of salt in a large bowl.
Add the wet ingredients: Add the cooled strong coffee, vegetable oil, eggs and vanilla extract to the dry mix. Gently stir the ingredients together until well combined.
Pour the batter into the baking tin: Pour the cake batter into the prepared baking tin and smooth the surface.
Make the crumble: Mix the brown sugar, flour, ground cinnamon and cold cubed butter in a small bowl. Work the mixture with your fingers until crumbles form.
Applying the crumbles: Spread the crumbles evenly over the cake batter in the baking pan.
Baking: Bake the coffee cake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
Cool: Leave the cake to cool in the tin for about 10 minutes before turning it out onto a wire rack to cool completely.
