Cherry jam with coffee

Ingredients:
500 g fresh cherries, pitted and halved
250 g gelling sugar (1:2)
100 ml strong, fresh coffee (preferably espresso)
Juice of half a lemon
1 teaspoon vanilla extract (optional)
A pinch of cinnamon (optional)
Preparation:
Prepare the cherries: Pit the cherries and cut them in half. This is the most time-consuming part, but the effort is worth it for the end result.
Simmer the cherries: Place the cherries in a large saucepan with the preserving sugar and simmer the mixture over a medium heat, stirring occasionally.
Add the coffee: As soon as the cherries start to juice, add the fresh coffee. The coffee will give the jam a rich, deep flavor.
Seasoning: Add the lemon juice to balance the sweetness and refine the jam. If you like, you can now also add vanilla extract and a pinch of cinnamon for extra spice.
Cooking: Leave the mixture to boil for around 10 to 15 minutes, or until it has reached the desired consistency. Stir regularly to prevent burning. If you don't want half cherries, puree the mixture with a blender.
Prepare the jars: Fill a large pan with water, place the jars in the pan and let them bubble really hot. This prepares the jars for bottling.
Filling: Fill the hot jam into sterilized jars. Seal and turn upside down to cool.
